Corned beef curry recipe

A curry is a traditional Indian dish of meat and vegetables which is cooked in a spicy sauce.  Whilst you can go to town making one with more expensive speciality produce, it is also possible to make one on the cheap with tinned food you probably already have in your kitchen cupboard.  Here’s a simple recipe using low cost ingredients such as corned beef and baked beans.  My mum used to make it when we were kids, it’s very filling so perfect for cold winter days.

Preparation time: 5 mins
Cooking time: 25 minscorned beef curry

Ingredients

1 medium sized onion, chopped
1 tbsp curry powder
1 tbsp tomato puree
1 tin of baked beans
1 tin of chopped tomatoes (or 3 large fresh tomatoes)
1 tin of corned beef
Salt and pepper to taste

Method

Brown the onions in a little oil in a large and deep sided frying pan.  When the onions are soft add the chopped tomatoes, corned beef, tomato puree, curry powder, salt and pepper.  Stir until the corned beef has broken down and there are no lumps.  Add enough cold water so that you have plenty of juice and bring to the boil.  Turn down the heat, add the baked beans and simmer for 5 minutes.  The only important thing here is to remember to stir the curry mixture often as the corned beef sinks to the bottom and may start to burn on the bottom of the pan.

Serve with rice and enjoy!
